Sunday dinner, my wife is having a nap and I didn’t want to drool alone.

Participantro-tel is diced tomatoes with chilis.
Quantities:
one can beef broth (normal soup can size)
large can of mushrooms, drained
2 cans of stewed tomatoes (~14oz each)
large can of tomato paste (~16oz)
small can of ro-tel (or larger, if you like things spicy)
large can of black beans (about twice the size of a soup can, drained and rinsed)
2 packages of frozen super-sweet corn (total of 24oz)Toss all that into the crock pot and set to high. Slice up a whole head of garlic (I love garlic) and half a purple onion and brown in olive oil with pepper. Add stew beef (and maybe a little cheap whiskey) and brown til done outside and rare inside with more pepper, add to crock pot. After a couple hours boil up a cup or 2 of elbow macaroni, drain and add to crock pot. Feeds 2 people for about 4 dinners or more. Reheats really well, my wife swears it’s better after sitting in the fridge for a day then reheated.
There are so many ways to vary this mix, and with stew beef it might cost about $15 total. It gets cheaper with ground beef, or even no meat at all. Add garlic bread or a baguette and you’re all set.

ParticipantI don’t like stewed tomatoes but that sounds awesome! I guess I would just spoon them out of my bowl and dig in.

ParticipantMinus the macaroni, it sounds a lot like what my wife calls “taco soup.” And I agree with your wife; it does seem to be better the next day.

You could substitute diced tomatoes, or another can of broth, or water etc and add some other veggie as filler, I guess. I’m actually partial to okra in this stuff, but my wife hates “those drooly things”! 😆
CISO, now that I think about it, this stuff would likely be really tasty replacing the macaroni with a packet of taco seasoning…
Gotta love crock pots. Just throw whatever you have in there and in a couple hours you have food for days.

Participantkill the heat as soon as the meat gets to “that point”.
I just had a big ol’ bowl with a fist-sized chunk of buttered baguette. I’m gonna be voracious on it for 3-4 days… there’s a reason I only do this like once a month, after a week you’re craving some variety. All I need is maybe 1/2 a dozen other weeks-worth recipes and I could prolly do dinner for 2 for a month on about $100 and still have steaks a couple times.
